Using a slow cooker or pressure cooker in summer helps keep things cool in the kitchen so you don’t have to sweat over a hot stove or get your oven on. If you don’t have one, I highly recommend an Instant pot (affiliate link) as it does both. I tend to use the pressure cook function more than the slow cook function, but it’s helpful to have the choice.
The focus this week: a pork shoulder cooked until the meat is fall-apart tender, with two leftover ideas, one store cupboard fish recipe and a surprisingly delicious veggie-pasta recipe.. All recipes serve 4; you know your family’s appetite best so if you want leftovers, check quantities and increase if needed.
